Here at Harrods, we currently house more Michelin starred chefs and exclusive dining brands than any other location in the UK. You will be joining a passionate and supportive team within our Kerridge's Fish & Chips restaurant, housed within our iconic Knightsbridge store. 

About The Role 

The Chef de Cuisine for Kerridge's Fish & Chips, will be responsible for leading that area of the business and the team in a manner that will ensure that a professional and correct operation is carried out at all times. You’ll be responsible for the operation and organisation of the kitchen by setting daily production levels and guidelines and delegating to the team. 

As the Chef de Cuisine, you’ll be responsible managing the planning and forecasting of stock levels and orders, always ensuring compliance to all internal systems including SAP and Workday. You’ll be reviewing staff deployment regularly with Sous Chef to ensure that the department in resourced effectively. In this role, you’ll also guarantee that Food Safety standards are adhered to by enforcing the high standard of hygiene and sanitation in all food-related outlets. 

About You 

You’ll have a strong track record of hospitality experience at a senior level, ideally within a high volume, high end restaurant environment. Time spend working with fresh fish and seafood would also be highly advantageous, but having a great knowledge and passion for food and drink is essential.

You’ll have great time-management skills and a strong customer focus when dealing with both internal and external parties, including our partnership with the Tom Kerridge brand. You’ll have exceptional interpersonal skills and a good attention to detail, which will be evident through paperwork completed, organisation of department and sufficient stock levels. Having good PC literacy is a must (Word, Excel and preferably SAP).
