Chef de Cuisine - Sushi

Here at Harrods, we currently house more celebrity chefs, and exclusive dining brands than any other location in the UK. And we are proud to announce this wonderful opportunity to join our new Sushi restaurant, in partnership with 3 Michelin starred chef, Masayoshi Takayama of Masa, NYC. You will be joining a passionate, supportive, and award-winning Michelin standard dining team, all within our iconic Knightsbridge store.

About The Role

The Chef de Cuisine for our exciting new sushi concept will be responsible for leading that area of the business and the team in a manner that will ensure that a professional and correct operation is carried out at all times. You’ll be responsible for the operation and organisation of the kitchen by setting daily production levels and guidelines and delegating to the team.

As the Chef de Cuisine, you’ll be managing the planning and forecasting of stock levels and orders, always ensuring compliance to all internal systems including SAP and Workday. You’ll be reviewing staff deployment regularly along with the Sous Chef to ensure that the department is resourced effectively. In this role, you’ll also guarantee that food safety standards are adhered to by enforcing the high standard of hygiene and sanitation in all food-related outlets.

About You

You’ll have a strong track record of hospitality experience at a senior level, with extensive experience or education in Japanese culinary skills and practices, with a strong focus on sushi skills. You'll also ideally have time spent within a Michelin or 2/3 Rosette standard restaurant, and be confident working in a customer facing kitchen

Having a great knowledge and passion for food and drink is essential. You’ll have great time-management skills and a strong customer focus when dealing with both internal and external parties. You’ll have exceptional interpersonal skills and a good attention to detail, which will be evident through paperwork completed, organisation of department and sufficient stock levels. Having good PC literacy is a must (Word, Excel and preferably SAP).
