Safety, Legality and Quality

  • Works with Chefs, category teams and supply base to become the safety, legality and quality expert and ensures that Harrods products are consistently produced to an exceptional quality.
  • Ensures finished product quality is consistently to the agreed recipe and specification.
  • Responsible for investigating safety and quality issues & implementing corrective actions plans with the Chefs and is the key channel of communication to the Kitchen Ingredient Technologist on quality and safety issues.  
  • Responsible for setting and validating shelf life of mise en place and product on sale.
  • Responsible for integrating specifications onto the iPads with accuracy and on time without causing a delay to launch.
  • Responsible for verifying compliance against recipes and methods to ensure consistency is maintained whilst identifying opportunities for process improvement and efficiencies.
  • Delivers project work to enhance product quality and improve due diligence with direction.
  • Developing SOPs alongside nominated kitchen team to ensure safety of product through life.
  • Part of team developing HACCP in kitchen and monitoring compliance through audits.
  • Monitoring and coaching kitchens by monitoring food safety quality management system and working with Senior Food Safety Advisor to maintain this.
  • Investigation of complaints
  • Auditing of kitchens and food halls

Product Development Process

  • Responsible for ensuring that our in-house produced products comply with Harrods Brand Standards, Technical Standards and Sourcing Policies
  • Manages the technical aspects of product development which includes setting shelf life through validation, cooking validation, defining key safety and quality controls and identifying the opportunity for process control.    
  • Approves and maintains accurate finished product specifications to ensure that product is safe and has clearly defined quality attributes.

Food Law

  • Utilises Harrods Brand Standards to ensure technical knowledge is up to date with food regulations and Harrods requirements to ensure effective utilisation in day to day work.
  • Responsible for ensuring that recipe builds and specifications accurately reflect products on a day to day basis and are collated and available on the system  
  • Responsible for ensuring that ticketing for loose products and the labeling of product packed in-house complies with the EU Food Information for Consumers Regulation (EU FIC)

Responsible for ensuring that information held on HOSS and iPads are an accurate representation of product on sale in restaurant and food halls
